Crunchy Cake Mix Chocolate Oatmeal Cookie

What better way to spend a rainy Friday afternoon at home with the hubby than with a cup of cappuccino. But unlike him, I cannot stand adding sugar to my coffee so for an afternoon cappu, I usually eat something sweet.  I remembered that yesterday, in my attempt to finish off the remaining Betty Crocker cake mix since I didn't like it that much for a cake, I decided to use it to for a cookie.  I mixed 1/2 cup of it with 1/4 cup unsalted butter, 1 egg, and 1 cup rolled oats (half of it ground).  I rolled a spoonful of dough and flattened it onto a baking sheet and baked at a 350F preheated oven for 18 minutes. And voila! A perfect crunchy dessert!
